Chameleons as a general rule should not be held, as it is very stressful on them and chameleons are very fragile and easily stressed, even the 'hardy' species.

I use to have Jackson's Chameleons as well...
Yours does not like to be held because he sees you as the predator and thinks he narrowly escapes death every time you interact with him. That and very few reptiles actually 'enjoy' being touched or handled. If you want a reptile you can handle, then get a bearded dragon. They're very much like dogs. But chameleons are best suited for observation only.

most chameleons do not like being handled, even the ones that appear to like it, are really just tolerating it, although some definitely have a better disposition than others , it is better not to handle any chams, especially a jackson's, unless it is absoloutely necessary, in most cases excessive recreational handling will lead to a decline in health that is usually not noticed until it is hard to reverse, if one must handle a chameleon there is definitely a right way and a wrong way , screameleons has recently produced a three part video on the proper ways of handling a chameleon (if you must) part1; http://www.youtube.com/watch?v=3Wjd_w-j5QI part2; http://www.youtube.com/watch?v=qHotMBtyVec part3; http://www.youtube.com/watch?v=ccjBhJlKpy4
